12 Days of Local Food – Sweet Potatoes

A traditional favourite during the holidays, and enjoyed throughout the year, sweet potatoes can hold their own as part of dinner or as dessert.  The following recipe (found on GeniusKitchen.com)  seems to be popular with our neighbours to the south of us.

Sweet Potato Pie:

Ingredients:

1/3 cup butter (or substitute)

1/2 cup sugar

2 eggs, lightly beaten

3/4 cup evaporated milk

2 cups mashed sweet potatoes

1 tsp vanilla extract

1/2 tsp each of cinnamon and nutmeg

1/4 tsp salt

9″ Pie crust prepared according to your favourite recipe.

Instructions:

Preheat oven to 425 degrees F.

In a mixing bowl, cream butter and sugar.  Add eggs, mix well.

Add milk, sweet potatoes, vanilla, cinnamon, nutmeg and salt.  Mix well.

Pour into pie shell.

Bake for 15 minutes at 425 degrees F.  Reduce heat to 350 degrees F, bake for 35-40 minutes longer or until pie tests done.

Cool, store in refrigerator.

Tip 1: Serve with whipped cream or ice cream.

Tip 2: Top with toasted pecans, if desired.
