12 Days of Local Food – Carrots!

Our carrots are so sweet they are good prepared in the simplest of ways.  But if you’re looking for something a little special for the holidays, try this recipe for Honey Roasted Carrots found on allrecipes.com:

Ingredients:

8 carrots, peeled

3 tbsp olive oil

¼ cup honey

Salt and pepper to taste

Directions:

Preheat oven to 350 degrees F.

Place whole carrots into a baking dish, drizzle with olive oil.  Mix until the carrots are completely covered with oil.

Pour on the honey, then season with salt and pepper.  Mix until evenly coated.

Bake in preheated oven until just tender, or cooked to your desired degree of doneness (approx. 40 min – 1 hour).
